Microwave Gluten-Free Bread

Looking for a quick and easy way to make gluten-free bread?

This microwave gluten-free bread recipe is ready in minutes using VegiBread—no oven, no yeast, no fuss.

Just add egg, water and olive oil, microwave for 4 minutes, and enjoy fresh, warm bread anytime.

How to make microwave gluten-free bread

What you'll need

  • 1 sachet of VegiBread bread mix

  • 1 large egg

  • 1 teaspoon olive oil

  • 1/3 cup water

Tips for best results

  • Use a flat bottom ramekin/dish/jug approx 11cm wide/7cm tall (see examples here)

  • Stir wet ingredients well before adding VegiBread sachet

  • Let cool slightly before cutting

1. In small microwave safe ramekin place egg, water and oil. 

Using a teaspoon, mix until well combined.

2. Add VegiBread sachet and stir until it becomes slightly thicker.  Scrape down the sides and give another quick stir.

3. Cook on HIGH for 4 minutes in microwave. Depending on your microwave wattage, this may need to be amended slightly. 

4. Carefully remove from microwave (careful, dish will be HOT). Tip out onto a cooling rack or on a plate. 

5. When cool, top with your favourite toppings or as a side with your meal.

Can you make without a microwave? 

VegiBread was created to be made in the microwave, however you can also cook in a waffle maker or a frying pan (using egg rings).  Although the bread will not be as fluffy and light, it is still delicious topped (my favourite cottage cheese and sun-dried tomatoes). 

Frying pan method

Heat a non stick frying pan, place egg rings and fill with made VegiBread mix (1 sachet will fill 2 rings), 

On medium heat, place a lid on pan for approx 5 mins.  Remove lid and gently pry off rings. 

Flip, replace lid and cook other side.

Waffle maker method

Heat a non stick waffle maker. Pour ready made VegiBread mix onto iron, ensuring you do not overfill (have a chopping board or mat underneath in case it overflows).  Cook for approx 7 mins and when waffle maker releases grip on VegiBread it is ready to go.
